     Maple Horseradish glazed beets

Ingredients
1 3/4 lbs fresh beets
1/4 cups unsalted butter
3 TBS horseradish or horseradish cream
1 1/2 TBS maple syrup
1/12 TBS apple cider vinegar/or cider vinegar
S&P
 

Instructions
Pre-heat oven to 400oF. Trim stems off beets and wrap in tin foil. Bake appx 1 hr. cool
When cool enough to handle rub off peel. (I recommend wearing gloves) Cut into eights or quarters, depending on size of beet and place in large bowl.
Over mod. heat, melt butter with horseradish, syrup,vinegar S&P. in a large skillet.
Stir in beets and bring to boil stirring occasionally until liquid is absorbed (reduced to about 1/4 cup) and beets are coated and tender.
Serving Suggestions
Serve as side dish, The BEST beets ever, even for beet haters.
