     Crunchy Chicken Cones

Ingredients
2 Large Egg Whites
3/4 c cornflake crumbs
1/4 c chopped sliced almonds
8 chicken tenders (1 lb)
1/4 c low-fat mayonnaise
2 Tbsp chopped fresh cilantro
juice of 1/2 lime
4 (6 inch) warmed multigrain torrillas
1 c shredded romaine lettuce
 

Instructions
Preheat oven to 425F degrees. Spray large rimmed baking sheet with nonstick spray.
Whisk egg whites in pie plate. Mix cornflake crumbs and almonds on sheet of wax paper. Dip chicken tenders, 1 piece at a time, into egg whites, then into crumb mixture, pressing to adhere. Place chicken in single layer on baking sheet; spray with with nonstick spray. Bake until golden brown and cooked through, about 30 mins.
Meanwhile, to make sauce, mix low-fat mayonnaise, cilantro, and lime juice in small bowl.
Place 2 chicken pieces in each tortillas. Top evenly with shredded romaine lettuce. Spoon 1 Tbsp sauce onto each tortilla; roll up into cone shape. PointsPlus value- 8
