handful fresh baby SNOW PEAS
handful frozen regular PEAS
1 medium CARROT - shredded w/ a veg. peeler
1/2 inch slice RED ONION - quartered
3-4 Tbl. diced GREEN BELL PEPPER
2 medium SWEET BANANA PEPPERS - sliced
1 JALAPENO PEPPER - cleaned, seeded, and diced
coarse ground BLACK PEPPER
1 Tbl. real BUTTER

In butter on med-low heat, saute peppers, onion, and carrot stips. (You might not be able to shred the whole carrot - use just as much as you can peel). Stir often.
When almost done, add frozen peas and snow peas and stir-fry until done. Sprinkle with salt and black pepper.
NOTE- I was just trying to use up some leftover tidbits and was surprised how good it was.
Serving Suggestions
Serve in a bowl as a side-dish.
