     Hot Brown

Ingredients
1/2 cup butter
1/2 cup flour
3 to 3 1/2 cups milk
6 tablespoons grated Parmesean cheese
1 egg, beaten
1 ounce heavy whipping cream (optional, but suggested)
Salt and pepper to taste
8 to 12 slices toast, may be trimmed
Slices of roast turkey
 
Grated Parmesean cheese
8 to 12 strips fried bacon

Instructions
Melt the butter in a saucepan. Add the flour to make a reasonably thick roux that absorbs all butter. Add the milk and 6 tablespoons Parmesan cheese, stirring constantly. Add the beaten egg to thicken and continue stirring. Do not allow sauce to boil. Remove from heat. Fold in the cream. Add the salt and pepper to taste.
Place two slices of the toast on a metal or flameproof dish for each hot Brown. Cover the toast with a liberal amount of turkey. Pour a generous amount of the sauce over the turkey and toast. Sprinkle with the parmesan cheese. Place the entire dish under a broiler until the sauce is speckled brown and bubbly. Remove from the broiler and place two pieces of the bacon crosswise on top. Serve immediately.
