Preheat oven to 350 degrees. Season chicken with salt & pepper. Stuff the onion & rosemary in cavity. Tuck the wings under & tie up legs. Place in roasting dish. Rub with softened butter evenly, insert meat thermometer.
Roast in oven 2-2 1/2 hrs until temp reaches 165 degrees. Remove from oven & let rest 10 min before carving.
