     Easy Pineapple Sherbet

1/2 fresh pineapple, peeled and sliced or about 1 cup
1/4 cup sugar
2 tbsp water or pineapple juice
2 tbsps lemon juice
1 tsp lemon zest
1 quart lowfar buttermilk

In a small heavy bottomed saucepanover mediam heat, Add the pineapple, sugar, water or pineapple juice, lemon juice and zest. Stir just until sugar melts. Let cool to room temperatre.
Trasfer pineapple mixture to food processor and add 1 cup buttermilk. Process until smooth. With motor running, gradually add remaining buttermilk and blend until smooth.
Pour ocontents into greezer safe dish and place in freezer.
Freeze until firm abot 3 hous or overnight
Serving Suggestions
Makes 6 to 8 servings
