8 cups water (or a combo of chicken and vegetable stock)
1 pkg chili seasoning (such as McCormick)
1 ham bone
1 c chopped carrots
1/2 stalk celery, chopped
1 c chopped onion
1 tsp minced garlic
1 tsp mustard powder
2 bay leaves
2 c chopped ham
1/2 tsp ground white pepper
Instructions
Rinse the beans, sorting out any broken or discolored ones. Bring the water or stock and the packet of chili seasoning to a boil in a large pot over high heat. Add the beans and remove from the heat. Let sit for at least one hour.
Return pot to high heat and add ham bone, carrots, celery, onion, garlic, mustard and bay leaves. Stir well. Bring to a boil, reduce heat to low and simmer for 60 more minutes.
Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season to taste with white pepper. Remove bay leaves before serving.
