2 eggs
2/3 c sugar
2 very ripe bananas
1/4 c applesauce
1/2 c nonfat milk
1 T vegetable oil
3/4 T vanilla
1 3/4 c flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 c chopped walnuts

Preheat oven to 325, spray loaf pan with non stick spray and coat with flour. In a large bowl beat eggs and sugar about 5 minutes until light and fluffy. Beat in bananas, applesauce, milk, oil and vanilla. In a seperate bowl mix dry ingredients. Mix into banana mixture. mix until just blended. Pour into loaf pan. Bake for about 1 hour or until toothpick comes out clean
