1 Cup of rice, unless you want to use two chicken breasts. 1 cup of sour cream, 1 little can of chopped green chilies, 1 can of cream of chicken, cheese (it's your call on how cheesy you want the inside, i usually do about a handful or so). Mix everything in a bowl, throw the ingredients in some tortillas, leave some to cover the top of the enchiladas once you have them in a baking pan. Sprinkle some cheese on top, bake until the cheese is melted and the outside of the tortillas are a little crispy (between 15 and 20 minutes @ 350) then tada! delicious -)
Oh and when you are mixing stuff together you can add garlic, salt, pepper, whatever tickles your fancy.
