     Tortellini (now Ravioli) Salad

Ingredients
1 lb (16 oz) Rising Moon Organics Spinach Florentine Ravioli
1/2 cup seeded and chopped green bell peppers
1/2 cup seeded and chopped red bell peppers
1/2 cup chopped scallions, with some green tops
1/3 cup pine nuts
1/4 teaspoon basil
1/4 teaspoon dill
1/4 cup Parma (or substitute)
 
For the dressing-
1/8 cup balsamic vinegar
1 clove garlic, minced
1/8 teaspoon salt
1/8 teaspoon black pepper
1/3 cup peanut oi

Instructions
Cook the ravioli according to the package directions. Rinse carefully with cold water and stir occasionally to keep ravioli from sticking.
Drain the ravioli and place in a large bowl with the peppers, scallions, pine nuts, basil, dill, and Parma. Stir.
To make the dressing, combine the vinegar, garlic, salt, and pepper in a small bowl. Whisk in the oil until well combined. Pour the dressing over the ravioli and chill for at least 45 minutes. Tastes different cold!
