Clean leeks thoroughly and cut in 3-4 cm pieces.
Add to an ovenproof dish/baking sheet.
Drizzle with the oil and add the thyme and the salt. Turn the leeks in the oil, thyme and salt to ensure covered on all sides.
Add a little water to the bottom of the dish to ensure the leeks do not burn to the bottom.
Bake in a preheated oven at 200c for roughly 30 minutes. Turn half way through if needed.
