     Shrimp & Grits

Ingredients
1 tsp salt
1 cup stone ground grits
2 tbsp unsalted butter
1/2 cup mascarpone cheese
30 large raw shrimp (peeled & devained)
1 tbsp chopped thyme
2 tbsp minced garlic
2 tbsp minced onion
2 tbsp roasted red peppers
 
4 cups chicken stock
2 tbsp unsalted butter
1 tsp lemon juice
1 tbsp chopped chives
Olive oil
Salt, pepper, Tony's seasoning
2 cups chopped tomatoes (peeled and seeded)

Instructions
Prepare grits with 4 cups of salted water. When grits are cooked, stir in butter and mascarpone cheese. Cover and remove from heat.
Season shrip with salt, pepper, and Tony's. Heat olive oil in a large skillet. Add shrimp and saute until they start to turn brown. Remove and set aside. Add thyme, garlic, onions, and red peppers. Saute for 2 minutes. Add chicken stock and bring to a simmer. Mount in butter and cook until sauce thickens somewhat. Add shrimp, lemon juice, tomatoes and chives. Simmer for 2 minutes.
Serving Suggestions
Serve over grits.
