     STEAK TOMATILLO CHILI

Ingredients
1 Tbsp Olive Oil
1/2 cup Diced yellow onions
1/2 cup Diced green peppers
1 Tbsp Minced garlic
5 lbs Stewing beef, cubed
1 tsp Pureed chipotle chili
1/2 tsp Dried thyme
1 Tbsp Cumin
1 tsp Dried oregano
 
1 cup Diced canned tomatoes
1 cup Chili sauce
6 ea Canned tomatillos, pureed
1 Tbsp Black pepper
3 Tbsp Chili powder
1 bunches Fresh cilantro, chopped
2 cups Beef stock, low sodium
2 cans Pinto beans

Instructions
Heat oil in a large skillet; add onions, green peppers, and garlic, and sauté for 5 minutes. Add beef and cook until beef is browned. Add remaining ingredients to pot. Simmer for 45 minutes or until beef is tender. Season with salt and pepper to taste.
