3 lbs Harmon's pork spoon roast, cooked as directed and shredded
3 cups chicken broth
1/4 cup Worchestershire sauce
3 Tbl lime juice
1 Tbl garlic, minced fine
1 tsp oregano
2 tsp cumin
1/4 cup chile powder, good quality
2 large red and green bell peppers, sliced
1 lg yellow onion, sliced
fresh salsa, guacamole, sour cream
1 pkg corn tortillas
Instructions
In a slow cooker, place the spoon roast and first 7 ingredients. St on high for 3 hours or low for 5 hours.
Remove the roast and let cool enough to shred. Saute the peppers and onions in 1 Tbl canola oil to soften. Add a little of the liquid from crock pot for flavor.
In the meanwhile, stack 12 tortillas on a plate, wrap tightly with plastic wrap, and microwave on high for 1 minute. Serve with pork and condiments.
