2 1/2 lbs raw tilapia (should yield four 7 oz cooked servings)
3 cups fresh tomatoes, diced
2 cups bell peppers, diced
2 cups mushrooms, diced
1 cup scallions, chopped
1/2 cup tomato salsa
8 tsp olive oil
2 Tbsp lemon juice
dash of salt and pepper
Instructions
Preheat over to 350 degrees. Clean and cut all vegetables as directed and place in a large bowl. Mix tomato salsa with vegetables. Place tilapia in a large casserole dish. Sprinkle lemon juice over tilapia, add olive oil to dish over fish. Top fish with vegetable mixture. Bake in over 25-30 minutes or until fish easily flakes with a fork. Serve ward, salt and pepper to taste.
