     Angel Food Cake

1 1/4 cups sifted Swan's Down Cake Flour
1/2 cup sugar
1 1/3 cups sugar
12 egg whites(or 1 1/2 cups)
1/4 tsp. table salt
1 tsp. vanilla extract
1 1/4 tsp. cream of tartar
1/4 tsp.. almond extract
sweetened strawberries
whipped cream

Preheat oven to 375F. Sift cake flour and sugar together 3 times into a bowl and set aside. Sift 1 1/3 cups sugar and set aside. Beat egg whites, salt, vanilla, cream of tartar and almond extract until foamy then beat in the 1 1/3 cups of sugar, 2-3 tablespoons at a time.
Fold in the sifted 1 1/4 cups flour and 1/2 cup sugar into the egg whites. Pour into large angel food cake pan and bake at 375F for 30-35 minutes. Remove from oven and turn pan upside down until cool.
Cut along edge and center of pan and remove pan from cake.
Serving Suggestions
Top with fresh strawberries sweetened with sugar and dollop of whipped cream.
