2 egg whites, beaten (room temperature works best)
pinch of salt
1/4 teaspoon cream of tartar
2/3 cup sugar
1/4 teaspoon almond extract
1 teaspoon vanilla
1 cup chocolate chips
1 cup pecan or walnut meats (optional)
Instructions
Pre-heat oven to 350 degrees F.
Beat egg whites until foamy.
Add salt & cream of tartar, beat well
Gradually add sugar, beat until very stiff
Add almond & vanilla extracts, mix
Fold in chocolate chips and nuts
Drop by spoon on aluminum foil covered cookie sheet.
Place in oven.
Turn off heat at once and DO NOT PEEK for 8 hours (OK to stay in longer, I often do these before bed and they're ready in the morning).
