     Beef Enchiladas

1 lb ground beef
1 onion chopped
1 can cream of mushroom soup
1/2 can milk
1 can enchilada sauce (medium)
1 package white flour tortillas
Grated cheddar cheese to taste

Brown meat in skillet with onions.
Add can of soup, milk and sauce to meat mixture and mix well. Let simmer until heated through, about 10 minutes.
Using a slotted spoon, place mixture on tortillas. Sprinkle with cheese. Roll tortillas up to enclose filling, arrange in a 9x13 baking dish. Spoon remaining sauce mixture over top; sprinkle with remaining cheese.
Bake at 350 degrees for approximately 30 minutes or until cheese is melted and bubbly around edges.
Serving Suggestions
Spice it up- add chopped jalapenos and green chilis to meat mixture, pepper jack cheese on top!
