     Healthy Creamy Tomato Basil Soup with Tofu

Ingredients
2 cans of diced Italin style diced tomatoes
1 package of silken soft tofu, drained
1 medium onion, chopped
3 tbsp of minced garlic
2 tbsp dried basil
1 tsp balsamic vinegar
salt and pepper
olive oil
2 small pats of butter (optional)
 

Instructions
Puree drained tofu in blender. Add one can of tomatoes and puree together. In soup pot, once oil is hot, saute garlic and onions. When onions become translucent, add other can of tomatoes. Cook for about 5 minutes and add salt and pepper to taste. Add tomato mix from pot to blender. You may have to do in portions. Once all have been pureed together, pour everything back into pot.
Flavor with herbs and vinegar and salt and pepper if needed. Let everything come to a rolling boil and then turn heat down to medium-low to simmer for about 15 minutes. If desired, add the butter and stir into soup.
