     Soba Noodles with Peanut Sauce

Ingredients
For the peanut sauce- 1/4 cup soy sauce
1/8 cup brown rice vinegar
1/3 cup filtered water
1 Tablespoon pure Maple syrup
dash of freshly ground sea salt
1 inch piece of fresh ginger
1 cup natural peanut butter
2 Tablespoons toasted sesame seed oil
1/2 teaspoon paprika
 
1/4 cup soy sauce
For the Noodles-
1 medium carrot, cut into matchsticks
10oz bag frozen corn
1 red bell pepper, sliced
3/4 lb soba noodles
1/2 lb green beans, cut into 1 1/2 inch pieces

Instructions
For the sauce- Throw all of the ingredients into your blender and puree until smooth. Serve right away or chill and then bring to room temp before serving.
For the noodles- Bring a large pot of water to boil, and cook the noodles for about 5 minutes. Add the beans, carrots, corn and bell pepper and cook for another 5 minutes.
Drain the pasta and noodles. Transfer to a medium sized serving bowl and drizzle peanut sauce over the noodles.
