     Jess's Twice Baked Potatoes

Ingredients
4 large Potatoes
1/2 lb Bacon, finely diced and browned
4 Tbs Butter, melted in medium fry pan
1 large Onion, chopped
1/2 cup fresh Mushrooms, finely chopped
1 tsp Garlic powder
1 tsp Black Pepper
1 tsp chopped fresh Chives
1 tsp Salt
 
1 cup Sour cream
Small amount of Buttermilk or Half and Half
1 8 oz pkg of shredded Cheddar cheese
1 Tbs dry bread crumbs

Instructions
Bake Potatoes til done. While potatoes bake, add onion, mushrooms, garlic powder, black pepper, chives, and salt to butter in saucepan and saute til onion is tender.
Cut oval out of side of potato to create a boat. Spoon potato out of skin and place potato in a large mixing bowl. Mix.
To mixing bowl of potatoes, add Onion mix and sour cream. Mix well. Fold in 1/2 of the cheese, and 1/2 of the bacon adding a bit of Buttermilk or Half and Half.
Fill the boats. Top with remaining cheese, bacon, touch of chives. Bake at 200 degrees up to 2 hours covered with foil. Then bake at 350 degrees for additional 20 minutes uncovered.
