     Morracan chickpea salad

Ingredients
2 cups chickpeas (garbonzo beans)
2 cups diced tomatoes
1/4 cup diced red onion
1 red pepper diced
1/2 cup kalamato olives halves
1/4 cup olive oil
1/4 cup red wine vinegar
1/4 cup chopped parsley flat leaf
2-3 cloves mined garlic
 
1 tbsp cumin
1/8 tsp red pepper
can sub cucumber for olives

Instructions
Mix oilive oil, red wine vinegar, parsley, garlic, cumin, and red pepper together - set aside.
Mix chickpeas, tomatoes, red onion, olives (or cucumbers) together. Add dressing from above .
Serve chilled along warm side pitas with lemon wedges.
