Cooking Spray
1/2 Cup Butter, softened
1 1/2 Cups Light Brown Sugar
3 Large Eggs, Beaten
2 Cups Canned Pumpkin
1/4 Teaspoon Salt
1 Teaspoon Pumpkin Pie Spice
1 1/2 Cups All Purpose Flour
1 1 /2 Cups Quick Cooking Oats
2 1/2 Teaspoons Baking Soda

Preheat oven to 350 degreesa. Coat a 10 x 15 baking dish with cooking spray.
Using an electric mixer, in a large bowl, cream butter and sugar until light and fluffy. Add eggs and pumpkin and beat well. Add salt, spices, flour, oats and baking soda and mix thoroughly. Pour batter in prepared pan and bake 40-45 minutes until a toothpick unserted into the center comes out clean.
Cut into 24 pieces.
