     Rhubarb Pie

Preptime   1 1/2 hours

Ingredients
4 cups (one pound = 2 cups) chopped rhubarb
1 ½ cup sugar
6 Tablespoons flour
3 to 5 pats of butter
 

Instructions
Stir flour and sugar together. Add rhubarb and toss until evenly coated. Place filling into a pastry lined pan. Dot with butter. Add a top crust.
Bake 40 to 50 minutes at 425 degrees.
Serving Suggestions
I remember this was always a part of dinner for a harvest crew during the summer on the farm.
