Cut potatoes into fourths lengthwise. Then cut into 1 inch bites.
Place on baking sheet and drizzle with the olive oil, then sprinkle remaining ingredients on top of potatoes. Toss to combine and spread out evenly on baking sheet.
turn half way through. Let cool before serving.
