     Meaghan's Seafood Rice

Ingredients
1 bag of deveined shrimp with the shell on raw
mussells
2 c italian arborio rice
4 garlic cloves minced
1/2 onion minced
2 T fresh parsley
1 roasted red peper diced
1/2 c pecorino cheese grated
 
Sauce
1 small can V8
1 1/2 cubes chicken broth
3-4 t hot pimento paste
5 T (heaping) crushed tomatoes
3/4 t salt
pepper
2 1/4 c hot water

Instructions
In a deep frying pan or large saute pan add shrimp, rice, then mussels, onions, garlic, parsley, peppers and cheese. Drizzle with olive oil. In a 4 cup measuring cup add the hot water and melt the cubes of broth and then add the V8, pimento paste, crushed tomatoes, salt and pepper.
Pour the sauce over top of the saute pan mixture and cover. Bring to a boil and then turn down the heat and let it cook for 30 minutes.
