     Spinach, Tomato, Feta Egg Wrap

Ingredients
1 Whole wheat low-carb/low-fat tortilla
1/2 C. chopped spinach
1/3 C. egg subsitute
1-1/2 T. Reduced fat feta cheese, crumbled with basil and tomato
1 T. Hunt's Tomatoes, fire roasted diced with garlic
2 pieces sun-dried tomato in oil & spices, chopped.
 

Instructions
Spray small pan with nonstick spray, bring to medium heat. Add egg substitute, cook to form egg patty. Remove and set aside.
Remove pan from heat, re-spray, return to medium heat. Add chopped spinach and both types of tomatoes. Cook for about 1 minute, stirring occasionally, until spinach has wilted. Add cheese to pan and cook for additional 30 seconds. Remove from heat, allow to cool slightly.
Heat tortilla in microwave until slightly warm. Place veggie/cheese mixture in center of tortilla. Place egg patty on top, wrap tortilla envelope style (sides first, roll from bottom).
Place wrap in toaster oven (seam-side down) and bake for 1-2 minutes.
