Smash potatoes in mixing bowl. And egg and flour. Stir together
with a fork. Heat griddle over med-low heat. Pat out mixture into
pancakes. Place on griddle. Cook 8-10 minutes each side until
golden brown and heated through.
Amount of flour needed will depend on how much mashed potatoes
you started with. You could use anywhere from 1/4 cup to 3/4 cup
of flour. You want the consistency to be somewhat firm but not
stiff.
