Cook rice according to package directions, minus 1/4
cup water. Drain and cool
Bring 2 cups water and 1/2 tsp salt to boil in
medium saucepan. Cook shrimp on high for one minute.
Drain immediately and set aside.
Heat 1 tsp olive oil in saucepan and saute pepper
and onion until soft (about 5 minutes).
In large bowl, combine rice, soup, 1 1/2 cup cheese,
shrimp, pepper and onion and mix. Add salt and
pepper to taste. Place in 11x7 greased casserole
dish and top with remaining cheese. Bake at 325 for
30 minutes.
