Preheat oven to 500. Prepare turkey by removing
giblets and neck. Rinse inside and outside of turkey
under cold water. Stuff body with thyme, sage,
garlic and onion. Tie legs together with string (try
to close body cavity as much as possible).
Starting at neck cavity, loosen skin from breast and
drumsticks by inserting fingers, gently pushing
between skin and meat. Combine butter, salt and
pepper. Rub mixture under loosened skin.
Lift wing tips up and over back, tuck under turkey.
Pour chicken broth in bottom of roasting pan. Place
roasting rack in pan. Arrange turkey, breast sid up.
Bake at 500 for 30 minutes.
Reduce oven temp to 350. DO NOT OPEN OVEN OR REMOVE
TURKEY. Cook for 90 minutes or until it's 165 in
meaty thigh. Shield with foil. Let stand for 20
minutes.
