Ingredients
6-8 Pound Boneless Beef Rib Roast
Several cloves of Garlic for rub and inserting in roast
Olive Oil
DRY RUB RECIPE -
1- 1/2 TBS coarse or kosher salt
1 tsp freshly ground black pepper
1 TBS chopped fresh tyme or 1 tsp. dried
2 TBS. chopped fresh rosemary or 2 tsp. dried
3 large garlic cloves, minced
 

Instructions
Preheat oven to 500 degrees. Prepare the rub. The rub recipe can also be found in our Sauces category. We doubled the rub recipe for an 8 lb. roast. Wash and dry the meat, make small slices into the meat and insert garlic slivers. Rub the meat with olive oil then apply the rub.
Stand roast fat side up in roasting pan. You may want to place a cookie sheet underneath as the roast will splatter.
Compute the time for your size roast and desired result..rare, medium or well, be exact. DO NOT REOPEN THE OVEN DOOR-Under penalty of DEATH 5 min. per lb - rare 6 min. per lb - medium 7 min. per lb - well Example- an 8 lb roast will stay at 500 degrees for 48 min. for medium
Put the roast into the well preheated oven and close the door. Set the timer for the period you calculated for your roast. When the time goes off, shut the oven off and reset your timer for 2 hours, BUT DO NOT OPEN THE OVEN DOOR! At the end of the 2 hours, your roast will be ready to serve and perfect throughout.
