Combine all dry ingredients (including yeast) in bowl of heavy mixer.
While mxing on low add water, shortening and egg. Beat on high for 2 minutes. (This dough thins as it mixes; it starts out liek a thin cookie dough, but should look like a thick cake batter when done mixing.)

Divide dough into three 9-inch silicone pans. Spread dough to evenly coat the bottom of each pan.
Put in ovena nd turn on to 375 degrees.

Bake for 15 minutes. This inclues the preheat time. (The dough will rise while the oven is preheating.)
Transfer crusts to cookie sheets. Top with sauce, cheese, and favorite toppings. (I use a gluten-free spaghetti sauce.)

Bake an additional 15-20 minutes, or until cheese, is melted and slightly bubbly on top.
