     Corn Bread

Ingredients
1 cup UNflour
1 cup cornmeal
1/2 teaspoon xantham gum
1/4 cup sugar
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
WET INGREDIENTS
1 cup applesauce
 
2 eggs
2 tablespoons butter or margarine softened
1/4 cup water

Instructions
Preheat oven to 375 degrees. Place dry ingredients in bowl of mixer.
While mixing on low add wet ingredients. Mix fo 30 seconds. Pour batter into greased 8-inch square pan.
Bake for 25 minutes or until it tests done with toothpick.
Serve with honey or jam. Double recipe for 9/10 pan.
