     Salmon Primavera

salmon fillets
dijon mustard
1 small zucchini, thinly sliced
1 small yellow squash, thinly slices
2 plum tomatoes, thinly sliced
1/2 cup panko crumbs
2 tbsp chopped fresh dill
2 tbsp olive oil

Preheat oven to 375 Season fish with salt and pepper Brush evenly all over with mustard Place salmon on baking sheet Starting at the left end of the fillet, lay a column of overlapping slices of zucchini On the next row lay a column of overlapping squash On the next row lay a column of overlapping tomatoes Continue until whole fish is covered In small bowl,mix the crumbs,dill and olive oil Sprinkle over top of vegetables
Bake 30 - 35 minutes Remove one of vegetables in thickest part of fish to make sure fish is done Serve hot or room temperature
