10-15 potatoes diced
|

1 tbsp salt
|
|
1 cup mayo
|
|
1 tbsp mustard
|

6 hard boiled eggs chopped
|

1/2 cup sweet relish
|
|
1 celery stalk grated
|
|
1 onion diced
|
|
2 hard boiled eggs sliced
|

Instructions |
|
|
Boil diced potatoes with salted water in a covered dish. With or without the skin, your preference.

|
While potatoes are boiling, mix together mayo, mustard, 6 eggs, relish, celery & onion. Reserve the sliced hard boiled eggs & paprika for garnishing.

|
When the potatoes are tender, drain the water & transfer to a large mixing bowl. While the potatoes are still hot, fold in the mixture.
|
|
|
Transfer salad to a serving dish. Garnish top of salad with sliced eggs & paprika. Serve warm. Refrigerate AFTER salad has cooled.
