     Cream of Asparagus Soup

Ingredients
1 lb asparagus cut into 2 inch pcs
1 onion chopped
2 T butter
2 T flour
4 c chicken broth
1/2 c carnation milk
salt and pepper
 

Instructions
Saute onion in butter 3 min. Stir in flour. Add chiken broth slowly whisking all the while.Add asparagus. Cover and simmer 20 min. Puree mixture. Add cream and salt and pepper. I like to take out some of the asparagus before pureeing and add back later for some texture. Depends on if you want your soup totaly pureed or not.
