     Marinated Portobello Mushrooms & Gravy (9pts)

Basic Marinade
3 tbsp red wine vinegar
1/3 c extra-virgin olive oil
2 cloves garlic, chopped
1/4-1/2 tsp crushed red pepper flakes
1 tbsp fresh thyme, chopped
1 tbsp fresh parsley, chopped
Basic Pan Gravy
1 tbsp oil
2 tbsp shallots, chopped
4 mushrooms, chopped
2 tbsp flour
1 c vegetable stock

Combine marinade ingredients in the bottom of a shallow dish. Season Mushrooms with Steak Spice adn set into the marinade and turn to coat allow meat to hang out for a minimum 10 minutes, turn occasionally. Heat a nonstick skillet over medium-high heat. Add marinated meat and cook for 5-6 minutes on each side. Remove to a warm platter. Add butter/oil to the skillet then chopped shallots or onion and mushroom bits, and saute 3 minutes over moderate heat. Add lour to the pan and cook 2 minutes, stirring constantly. Whisk in stock and reduce for another minute. Pour over meat and serve.
