      Black Bean Soup

2 tsp olive oil
1 c chopped onions
1 c chopped carrots
1 c chopped red pepper
1 clove garlic minced
1 jalapeno pepper seeded and minced See note at bottom
3 c beef broth
1 c tomato sauce
2 cans 19 oz each drained and rinsed black beans
2 T chopped fresh cilantro (optional)
1 T lemon juice
1 T brown sugar
2 tsp oregano
1 tsp each chili powder ground cumin and worchestershire sauce
1/2 tsp dried thyme
1/4 tsp pepper
sour cream for garnish

Heat oil in large soup pot and add onions peppers carrots garlic and jalapeno. Cook for 5 min until begining to soften. Add all remaining ingredients except sour cream. Bring to a boil and reduce heat to med low and simmer covered 10 min. You can puree if you like. I like to puree about 1/4 and leave the rest as is. Garnish with sour cream.
NOTE- Did not have jalapeno so have substituted 1 tsp of Harissa spice mix. Really gave a nice kick and a smokey flavor. Could use canned jalapeno in adobo sauce a well but my fave I now Harissa spice
