Line bottom of 3 round cake pans with wax paper; grease side of pans. Microwave chocolate and water in lg bowl on high 1.5-2 mins or until almost melted, stirring after each min. Stir until chocolate is completely melted. Mix flour, baking soda and salt; set aside. Beat butter and sugar in lg bowl with electric mixer on medium speed until light and fluffy. Add egg yolks, 1 at a time, beating well after each addition. Stir in chocolate mixture and vanilla. Add flour mixture alternatively with buttermilk, beating until well blended after each addition. Beat egg whites in another lg bowl on high speed until stiff peaks form. Gently stir into batter. Pour evenly into prepared pans. Bake at 350 for 30 mins or until toothpick comes out clean. Immediately run spatula b/t cakes and side of pans. Cool 15 mins; remove cake from pans. Remove wax paper. Cool completely on wire racks. Spread frosting b/t layers and on top.
Icing- Mix milk, sugar, butter, egg yolks and vanilla in lg saucepan. Cook on med heat 12 mins or until thickened and golden brown, stirring constantly. Remove from heat. Add coconut and pecans; mix well. Cool to room temp and frost cake.
