     Beef Stew

Low Fat Ribeye Steak 1.5 pounds
2 cans low sodium diced tomatoes
5 stalks chopped celery - fine
1 Shallot - minced
Green onions minced
2 cloves garlic minced
1 tsp sea salt
1 tsp pepper
1 tsp rosemary
1 tsp garlic powder
1 pinch chili powder
1 pinch cumin
2 small yellow squash, sliced thin
2 small zucchi, sliced thin
1 tsp olive oil
1. 5 cups Beef Broth
2 cups Chicken Stock
2 Beef Boulion Cubes

1 tsp olive oil in large stew pot, add onion, shallots, green onions, garlic and celery. Add salt. Saute until tender, add squash and zuccuni and cook until slightly tender, add tomatoes.
Stir until tomato juices bubble, add broth and stock, boulion cubes, all remaining spices and bring slowly to a soft boil.
