     Baked Ham Omelet Cups

Ingredients
6 medium thickness Virginia or Black Forest Baked Ham
4 large eggs
3 tablespoons lowfat milk
1/4 teaspoon salt
2 tablespoons green onions chopped
4 slices low-fat cheeses
Mushrooms (Optional)
Jalapenos (Optional)
 

Instructions
Preheat oven to 325. Place nonstick skillet over medium high heat. Heat ham until warmed and browned. Chop ham into pieces (2 slices). Place 1 slice heated ham in muffin cup and press down to form a wrapper.
Beat eggs with milk and salt in small bowl. Stir in chopped ham and onions (or other veggies). Pour mixture into ham cups Bake uncovered for 15 minutes until eggs are set. Layer cheese over top and bake until whites are completely set and yolks begin to thicken but are not hard.
