In crock pot, place carrots, onion, celery, parsley and bay leaf. Place chicken on top of vegetables. In bowl, stir together soup, water, thyme and pepper. Pour over chicken and vegetables. Cover and cook on low 8-9 hours or high 4-4 1/2 hours.
Remove chicken, cool slightly.
Remove and discard bay leaf.
Remove chicken from bones and cut into bite size pieces, stir into cooker.
Stir peas into soup mixture in cooker. Allow to cook for 5 - 10 more minutes.
Meanwhile, cook noodles, drain.
To serve pour chicken mixture over noodles, toss gently to combine.
Serve with crusty bread and a salad.
