Melt butter in a saucepan and saute the onion for three or four minutes, until soft. Add the rice and saute for another few minutes. Add the remaining ingredients and bring to a simmer over medium heat. Turn down to low and cover, cook for 20 minutes.
Optional additions- fluff cooked rice with a little lime zest, some chopped pineapple, and/or some fresh cilantro.
Great with jerk chicken, curries, and pork or chicken based mexican dishes.
