In a medium sized bowl, combine peanut butter, maple syrup, egg replacer and vanilla. Add flour and stir until well combined.
Drop spoonfuls of dough onto cookie sheet, and use your thumb to make a small well in each cookie. Drop about a half teaspoon of jelly in the well of each cookie.
Bake for 6-8 minutes, until done.
