     Sugar-Free Peanut Butter and Jelly Cookie

3/4 cup peanut butter
1/4 cup maple syrup
Ener-G Egg Replacer for 1 egg
1 tsp vanilla
3/4 cup flour
Sugar free jelly, about 1/4 cup

Pre-heat oven to 350 degrees.
In a medium sized bowl, combine peanut butter, maple syrup, egg replacer and vanilla. Add flour and stir until well combined.
Drop spoonfuls of dough onto cookie sheet, and use your thumb to make a small well in each cookie. Drop about a half teaspoon of jelly in the well of each cookie. Bake for 6-8 minutes, until done.
