3 lbs beef rump roast
1 teaspoon salt
1/2 teaspoon ground pepper
2 tablespoons pickling spice
2 cups red wine vinegar
1 cup water
1 lemon (sliced)
1 onion (sliced)

Place all the above in large covered container and marinate for 2 or more days.
Remove meat and pat dry. Heat approximately 2 tablespoons oil in heavy pot and brown meat on all sides. Pour strained marinade over meat and simmer covered for about 3 hours.
Remove meat to a platter and let rest. Make gravy - thicken with 1 cup of gingersnap cookies (crushed) - or thicken as you would for brown gravy.
