     Classic Cottage Pie

Ingredients
1 lb ground beef
2 medium carrots, finely chopped
1 medium onion, finely chopped
2 Tbsp flour
2 Tbsp minced fresh parsley
1 Tbsp Italian seasoning
3/4 tsp salt
1/4 tsp pepper
1 1/2 cup plus 2 Tbsp beef broth
 
1 Tbsp tomato paste
1 tsp brown sugar
1/2 cup frozen peas
Topping-
4 medium potatoes, peeled and cubed
1/2 cup milk
1/4 cup butter, cubed
3/4 cup shredded cheddar
1/4 tsp salt

Instructions
Cook the beef and vegies. Drain. Stir in flour and seasoning until blended. Gradually add broth; stir in tomato paste and brown sugar. Bring to a boil. Simmer uncovered 10-15 minutes until thick. Meanwhile, boil potatoes until tender. Stir peas into meat mixture and transfer to a greased pie plate. Drain potatoes and mash with milk and butter. Stir in 1/2 cup cheese and salt and pepper. Spread over meat mixture and sprinkle with remaining cheese. Place pie plate on foil lined baking sheet. Bake at 400 degrees 20-25 minutes.
