1. Grill the aubergines directly on a flame or through a flat pan. When grilled, peel off the charred skin and mash the grilled aubergine.
2. Add ghee in a saucepan and fry the cumin and mustard seeds till they splutter.

3. Add the chopped onions and fry till brown.
4. Add the chopped tomatoes. Cook till soft.

|
5. Add the mashed aubergine and mix well.
6. Add the turmeric powder and chopped green chillies and mix well.

|
7. Add salt to taste, mix well and serve hot.
