3 c grated carrots
1 tsp cinnamon
4 eggs, unbeaten
1 tsp vanilla
2 c sugar
1 c chopped pecans
1 1/2 c salad oil
2 c flour
2 tsp baking soda
1/2 tsp salt
8 oz pkg cream cheese
1 lb powdered sugar

Pour salad oil over carrots, add eggs & sugar & beat until well blended. Mix together flour, salt, baking soda & cinnamon, then add to carrot mixture. Mix. Then add vanilla & pecans. Bake 40 to 45 minutes in 350 oven. Icing- cream cheese, powdered sugar & milk. Beat cream cheese with powdered sugar, add milk if necessary.
