     Strawberry Shortcake

2 pts. strawberries
1 Tbsp orange juice
1 Tbsp sugar or honey
Biscuits- 2 cups flour
3 Tbsp sugar
4 tsp baking powder
dash of salt
1/4 cup butter
2/3 cup sour cream
grated rind from 1 orange
Cool Whip whipped topping

Rinse berries. Pat dry, slice and put in a bowl. Sprinkle with sugar or honey and oj. Let sit for 30 min.
In another bowl, sift together dry ingredients. Add orange rind. With a pastry cutter cut in butter until coarse crumbs form. Lightly mix in sour cream to form soft dough.
On a floured board, roll dough to about 3/4 in. thickness circle. put in a 8 inch circle pan and bake in a 400 degree oven for about 20 min or puffed and golden brown. Remove from oven. Cut cake in half horizontally and spread with Cool Whip and layer with 1/2 of strawberries. Place top back on and top with more Cool Whip and strawberries.
To make individual cakes. After rolling to 3/4 in thickness. Cut dough into 6 cicles, 3 inches wide and bake.
