     Sweet Potato Soufflé

Ingredients
4 to 5 large sweet potatoes
1 1/2 sticks butter
1 cup sugar
3 eggs, beaten
2 tbsp vanilla
Milk until soupy
 

Instructions
Boil sweet potatoes until soft (takes a long time); remove peel. In large mixing bowl, add sweet potatoes, butter, sugar, eggs and vanilla. For best results, use a hand mixer. Add milk until soupy. Beat until like pudding. Bake at 325 for 45 mins. Cover top with marshmallows and return to oven on broil until marshmallows are brown.
